Super Easy and QUICK Banana Muffins!

Thanks to my Betty Crocker cookbook for this recipe! I usually make bread, but i was out of milk, so i opted to try these muffins! They were super easy and took me about 5 minutes to throw together! They have a slightly different taste than the bread would, but very delicious at any rate!

Banana Muffins
(Betty Crocker's New Cookbook, page 41)

1+1/4 cup mashed ripe bananas (3 medium)
3 Tablespoons vegetable oil
1 large egg
1/3 cup sugar
2 cups Bisquick Original baking mix
1/2 cup raisins or chopped nuts, if desired

Heat oven to 400. Grease bottoms only of muffin cups or use paper liners.
Beat bananas, oil, egg and sugar in large bowl til well blended.
Stir in baking mix and raisins just until batter is moistened-it will be lumpy.
Divide evenly among muffin cups.
Bake about 15 minutes or until golden brown.
Cool for 5 minutes, remove from pan to wire rack. Serve warm.

These muffins were delightful. They were all eaten before i thought about taking a picture of them! Enjoy!!
